LCHF #10: A Much Better Week

Remember I told you last week that I have gained weight and that it must have been the meds I was taking for the headache? The headache is not entirely gone yet, but a lot less after some intense sessions with a physiotherapist. Somewhere high in my neck is a tiny muscle where all nerves run through and that tiny muscle is too tight and crushing down on the nerves. Result: headache, light flashes, dizziness. But, I’m on the mend, and thankfully even though I gained weight last week due to fluid retention, underneath it I must still have been losing weight. That’s the only way I can explain the massive amount of weight that I lost this week.

I didn’t believe the scale this morning. I moved it around to about 10 different places in the room and then took it to the bathroom where I weighed a couple of times more. After seeing the same numbers over and over again, I just had to believe it. I was down 1.7 kilograms from last week Saturday. I even weighed myself on Wednesday and today I am 1.4 kilograms down from Wednesday. Am I happy? Yes, I am very happy! Thrilled actually. I am totally back on track despite the two bad weeks.

My total weight loss now (I am 3 days short from 3 months since I started the LCHF way of eating): 9.1 kilograms, which is 20.1 pounds or 1.4 stone.

I am proud!

On Wednesday, despite the ongoing headache, I decided to try out two new recipes. I actually have already bought ingredients to make crackers, but since the temperature outside has been unreasonably high I wasn’t in the mood to stand in front of a hot oven. So I decided to try something different. It was almost lunchtime, so I searched for a recipe for pancakes… and I found one.

When I found the above recipe, there was another recipe in the related post sections: coconut bonbons. However, I didn’t get them to ‘bind’ properly (I later read I should have used more coconut oil) so I gave my own twist to the coconut bonbons and have therefore changed the name of the recipe.

I am not really into baking or cooking, but I have found that making special things that support my diet and make me forget that sometimes I crave something nice, is actually quite nice. There are more things I want to try, but I will share that in a next post… or a next one.

  1. I feelfor you, I really know what a constant headache is like, and I also know about weight gain as a side effect of medication I took for my headache. Hang in there sweetheart, you’re doing well. Kudos <3
